Goat Cheese & Honey Breakfast Toast


One of my all time favorite breakfasts.

Goat Cheese & Honey Breakfast Toast

  • 2 eggs

  • 2 slices of good bread, like a great sourdough

  • Goat cheese

  • Honey

  • Avocado

  • Maldon salt or sea salt

  • Freshly ground black pepper

  • Aleppo pepper

  • Extra virgin olive oil

Take out your goat cheese to give it some time to soften at room temperature.

Toast the bread in a toaster or in a hot pan with a little bit of cooking fat, flipping after the first side is golden.  In a pan, add cooking fat of your choice and allow it to get hot, waiting until it shimmers.

In the meantime, crack 1 egg carefully into a bowl, making sure no pieces of shell have fallen in.

When your pan is hot add the egg, being careful not to break the yolk. Sprinkle with a little sea salt and black pepper.

In the meantime, spread goat cheese on warm toast.

When the white of your egg is at least halfway cooked, flip the egg letting it cook for a few moments, and then remove from the heat and place on toast. If you like a well done yolk, give it an extra minute over the heat.

Drizzle with honey and sprinkle with red pepper flakes and Maldon sea salt (regular sea salt or table salt works, too). If you have an avocado lying around, add it underneath your egg for an extra creamy layer!
